Sausage & Mushroom Lasagna

My homemade Lasagna is what's on today's menu. This Italian classic is simply delicious and easy to make.

Shitakes soaked in wine? yes please!

Made with several saucy layers of ricotta, basil, spicy sausage and ooey gooey cheese. It really should be in your family's recipe rotation.

Hands down the best Lasagna I ever made!





For this recipe you will need:


  • 2 packages of whole wheat lasagna

  • 4 - 6 dry shitake mushrooms

  • 3/4 cup white wine to soak the mushrooms

  • 2 tablespoons of olive oil

  • 1 chopped onion

  • 4-5 cloves minced garlic

  • 1 pound ground sausage

  • 2 tablespoons tomato paste

  • 2 cups of marinara sauce

  • fresh chopped parsley

  • salt and pepper to taste

  • 2 cups ricotta cheese

  • 3-4 tablespoons chopped fresh basil

  • 2 eggs

  • 4 cups graded mozzarella

  • 2 cups graded parmesan
